The Cribbiana vanilla, also called "Chesibik" in Maya language, is certainly the rarest and most surprising of all vanillas. Like the Pompona and the Chamissonis, the Cribbiana belongs to a completely different variety from the Planifolia or the Tahitensis cross which are also derived from the Mexican planifolia. It is said that if the Europeans had encountered the Mayas rather than the Totonacs, it would possibly be the one that would be used the most in the world because of its huge gastronomic potential! The pods are short, thick and loaded with caviar, with a floral fragrance and powerful notes of coumarin, cedarwood, coffee, anise and caramel, and offer a very appetizing and versatile bouquet of mysterious and exotic flavors. Both in pastry and savory dishes, it invites you on a new gastronomic journey with each of your creations.

 

The quantities produced  tend to increase because it is an authentic variety of the Guatemalan terroir in full development.
