Another amazing vanilla specie from Mexico is the Pompona Schiede vanilla pods, a sub-specie of Pompona vanilla that are primarily grown in South America, and in Mexico specifically in the states of Jalisco and Nayarit.
These vanilla pods are quite unique since they are from wild cultivars and were naturally pollinated by bees and hummingbirds. Highly prized for their distinct flavor and aroma, which is often described as floral, fruity and spicy, with more tannin and subtle notes of dark chocolate, caramel and tobacco, they are characterized by its plump, fleshy pod and high moisture content. Its size and shape make it ideal for use in cooking and baking, as well as for vanilla extract.
